Ingredients

- 1 lb ground beef
- 2 medium sweet potatoes, cubed
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup spinach, chopped
- 1 avocado, sliced
- 1/4 cup feta cheese, crumbled
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 25-30 minutes.
- Meanwhile, cook ground beef in a skillet over medium heat until browned.
- Season beef with salt and pepper.
- Once sweet potatoes are done, combine them with the beef in a bowl.
- Add spinach and toss to mix.
- Top with avocado slices and feta cheese.
