Ingredients

  • Ground beef: 1 lb (450 g)
  • Corn tortillas: 12 tortillas (about 300 g)
  • Enchilada sauce: 2 cups (480 ml)
  • Black beans: 1 can (15 oz or 425 g), drained and rinsed
  • Cheddar cheese: 2 cups, shredded (about 200 g)
  • Onion: 1 medium, diced
  • Garlic: 2 cloves, minced
  • Bell pepper: 1 medium, diced
  • Cumin: 1 teaspoon (5 g)
  • Salt: 1 teaspoon (5 g)
  • Pepper: 1/2 teaspoon (2 g)
  • Olive oil: 1 tablespoon (15 ml)

Instructions

  1. Prep all ingredients by chopping onion and bell pepper, and mincing garlic.
  2. Heat olive oil in a skillet, sauté onion and bell pepper for 3-4 minutes, then add garlic and cook for another minute.
  3. Add ground beef, cumin, salt, and pepper; cook until browned and fully cooked, then drain excess fat.
  4. In a baking dish, spread a layer of enchilada sauce, layer 4 tortillas, half of the beef mixture, and 1 cup of cheese. Repeat layers.
  5. Top with remaining tortillas, pour remaining enchilada sauce, and sprinkle remaining cheese on top.
  6. Cover with foil and bake at 375°F (190°C) for 20 minutes, then remove foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
  7. Let cool for a few minutes before serving, garnishing with cilantro, sour cream, or avocado if desired.
