Description
A hearty and delicious Ground Beef Enchilada Casserole that combines seasoned ground beef, zesty enchilada sauce, and gooey cheese layered between soft corn tortillas.
Ingredients
- Ground beef: 1 lb (450 g)
- Corn tortillas: 12 tortillas (about 300 g)
- Enchilada sauce: 2 cups (480 ml)
- Black beans: 1 can (15 oz or 425 g), drained and rinsed
- Cheddar cheese: 2 cups, shredded (about 200 g)
- Onion: 1 medium, diced
- Garlic: 2 cloves, minced
- Bell pepper: 1 medium, diced
- Cumin: 1 teaspoon (5 g)
- Salt: 1 teaspoon (5 g)
- Pepper: 1/2 teaspoon (2 g)
- Olive oil: 1 tablespoon (15 ml)
Instructions
- Prep all ingredients by chopping onion and bell pepper, and mincing garlic.
- Heat olive oil in a skillet, sauté onion and bell pepper for 3-4 minutes, then add garlic and cook for another minute.
- Add ground beef, cumin, salt, and pepper; cook until browned and fully cooked, then drain excess fat.
- In a baking dish, spread a layer of enchilada sauce, layer 4 tortillas, half of the beef mixture, and 1 cup of cheese. Repeat layers.
- Top with remaining tortillas, pour remaining enchilada sauce, and sprinkle remaining cheese on top.
- Cover with foil and bake at 375°F (190°C) for 20 minutes, then remove foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
- Let cool for a few minutes before serving, garnishing with cilantro, sour cream, or avocado if desired.
Notes
- Can substitute ground turkey for ground beef.
- For a vegetarian option, replace beef with black beans or lentils.
- Can prepare ahead of time and refrigerate before baking.
- Serve with a side of rice or salad for a complete meal.
