Ingredients
- Ground beef: 1 lb (450 g)
- Onion: 1 medium, chopped
- Garlic: 3 cloves, minced
- Bell peppers: 1 red and 1 green, chopped
- Diced tomatoes: 1 can (14.5 oz or 400 g)
- Kidney beans: 1 can (15 oz or 425 g), drained and rinsed
- Corn: 1 cup
- Shredded cheese: 2 cups
- Olive oil: 1 tablespoon
- Spices: Chili powder and cumin, to taste
Instructions
- Prep all ingredients by chopping onion, garlic, and bell peppers.
- Cook ground beef in a skillet with olive oil until browned, about 5-7 minutes.
- Add onion and garlic to the beef, sauté for 3-4 minutes.
- Stir in bell peppers and cook for another 3-4 minutes.
- Add diced tomatoes, kidney beans, corn, chili powder, cumin, salt, and pepper; simmer for 5 minutes.
- Spread the mixture in a greased baking dish and top with 1 cup of shredded cheese.
- Bake at 350°F (175°C) covered for 20 minutes, then uncover and add remaining cheese, baking for an additional 10-15 minutes.
- Let cool for a few minutes before serving.
