Description

Ingredients

  • Ground beef: 1 lb (lean)
  • Onion: 1 medium, diced
  • Garlic: 3 cloves, minced
  • Bell peppers: 1 cup, diced
  • Diced tomatoes: 1 can (14.5 oz)
  • Kidney beans: 1 can (15 oz)
  • Corn: 1 cup (frozen or canned)
  • Shredded cheese: 2 cups (cheddar or a blend)
  • Olive oil: 1 tablespoon
  • Spices: chili powder and cumin to taste
  • Salt and pepper: to taste

Instructions

  1. Prep the ingredients by dicing the onion and bell peppers, and mincing the garlic.
  2. In a large skillet, heat olive oil over medium heat and cook the ground beef until browned, seasoning with salt, pepper, chili powder, and cumin.
  3. Add the diced onion, minced garlic, and bell peppers to the skillet, cooking until softened. Then mix in the diced tomatoes, kidney beans, and corn, simmering for 5 minutes.
  4. In a greased 9×13 inch baking dish, layer half of the beef mixture, sprinkle 1 cup of cheese, add the remaining beef mixture, and top with the rest of the cheese.
  5. Cover with aluminum foil and bake in a preheated oven at 350°F (175°C) for 25 minutes, then remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.
  6. Let the casserole cool for a few minutes before serving, optionally garnishing with chopped green onions or cilantro.
