Ingredients
- Ground beef: 1 lb (lean)
- Onion: 1 medium, diced
- Garlic: 3 cloves, minced
- Bell peppers: 1 cup, diced
- Diced tomatoes: 1 can (14.5 oz)
- Kidney beans: 1 can (15 oz)
- Corn: 1 cup (frozen or canned)
- Shredded cheese: 2 cups (cheddar or a blend)
- Olive oil: 1 tablespoon
- Spices: chili powder and cumin to taste
- Salt and pepper: to taste
Instructions
- Prep the ingredients by dicing the onion and bell peppers, and mincing the garlic.
- In a large skillet, heat olive oil over medium heat and cook the ground beef until browned, seasoning with salt, pepper, chili powder, and cumin.
- Add the diced onion, minced garlic, and bell peppers to the skillet, cooking until softened. Then mix in the diced tomatoes, kidney beans, and corn, simmering for 5 minutes.
- In a greased 9×13 inch baking dish, layer half of the beef mixture, sprinkle 1 cup of cheese, add the remaining beef mixture, and top with the rest of the cheese.
- Cover with aluminum foil and bake in a preheated oven at 350°F (175°C) for 25 minutes, then remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.
- Let the casserole cool for a few minutes before serving, optionally garnishing with chopped green onions or cilantro.
