Ingredients

- 8 oz pasta of choice
- 2 medium zucchinis, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 clove garlic, minced
- Salt and pepper, to taste
- Fresh basil, for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Preheat the grill to medium-high heat.
- Grill the zucchini slices for about 3-4 minutes on each side until tender.
- In a large bowl, combine the cooked pasta, grilled zucchini, cherry tomatoes, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Garnish with fresh basil before serving.

- Use whole grain pasta for a healthier option.
- Feel free to add other vegetables like bell peppers or spinach.
