Description
A refreshing and colorful pasta salad loaded with grilled vegetables.
Ingredients

- 2 cups of pasta (your choice)
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 eggplant, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup fresh basil, chopped
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Preheat the grill to medium heat.
- In a bowl, toss the sliced vegetables with olive oil, balsamic vinegar, garlic powder, salt, and pepper.
- Grill the vegetables for about 5-7 minutes or until tender.
- In a large bowl, combine cooked pasta and grilled vegetables.
- Add fresh basil and mix well.
- Serve warm or chilled.

- Feel free to customize the vegetables based on your preference.
- This salad can be made ahead of time and stored in the fridge.
