Grilled surf and turf skewers with chimichurri sauce
Ingredients

- 1 lb shrimp, peeled and deveined
- 1 lb steak, cut into cubes
- 2 bell peppers, cut into squares
- 1 onion, cut into squares
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup parsley, chopped
- 1/2 cup olive oil (for chimichurri)
- 2 cloves garlic, minced
- 1 tablespoon red wine vinegar
- 1 teaspoon red pepper flakes
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine shrimp, steak, bell peppers, onion, olive oil, salt, and pepper.
- Thread the shrimp, steak, and vegetables onto skewers.
- Grill the skewers for 5-7 minutes, turning occasionally until cooked through.
- In another bowl, mix parsley, olive oil, garlic, red wine vinegar, and red pepper flakes to make chimichurri.
- Serve the skewers with chimichurri sauce on the side.
Notes
- Soak wooden skewers in water for 30 minutes to prevent burning.
- Adjust the level of red pepper flakes in chimichurri based on your spice preference.
