Ingredients

- Lettuce: 4 cups, chopped (romaine or mixed greens).
- Tomatoes: 1 cup, diced.
- Cucumbers: 1 cup, sliced.
- Olive oil: 2 tablespoons.
- Balsamic vinegar: 1 tablespoon.
- Salt and pepper: to taste.
Instructions
- Prepare the bread by laying four slices flat and optionally buttering one side of each slice.
- Choose your cheese, aiming for about one cup of shredded cheese.
- Cook the grilled cheese in a skillet over medium heat for 3-4 minutes on each side until golden brown and melted, then cut into crouton-sized pieces.
- In a large bowl, combine chopped lettuce, diced tomatoes, and sliced cucumbers, tossing gently.
- Drizzle the dressing made from olive oil, balsamic vinegar, salt, and pepper over the salad, then fold in the grilled cheese croutons just before serving.
