A fresh and vibrant pasta salad with a creamy Green Goddess dressing.
Ingredients

- 8 oz pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1 avocado, diced
- 1/4 cup fresh basil, chopped
- 1/4 cup parsley, chopped
- 1/2 cup Green Goddess dressing
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and cool.
- In a large bowl, combine the pasta, cherry tomatoes, cucumber, red onion, avocado, basil, and parsley.
- Add the Green Goddess dressing and mix well.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Use whole wheat pasta for a healthier option.
- Feel free to add other vegetables like bell peppers or carrots.
- This salad is best served cold.
