Ingredients

  • 1/4 cup vegetable oil
  • 1 large egg

  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, baking soda, and salt.
  3. In another bowl, combine Greek yogurt, sugar, milk, vegetable oil, egg, and vanilla.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. Pour the batter into a greased muffin tin.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool for a few minutes before serving.
