Description

A refreshing macaroni salad made with Greek yogurt instead of mayonnaise.


Ingredients

  • 2 cups elbow macaroni
  • 1 cup Greek yogurt
  • 1/2 cup diced celery
  • 1/2 cup diced bell pepper
  • 1/4 cup chopped green onion
  • 1/4 cup diced cucumber
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the macaroni according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine Greek yogurt, Dijon mustard, salt, and pepper.
  3. Add the cooked macaroni, celery, bell pepper, green onion, and cucumber to the bowl.
  4. Toss everything together until well mixed.
  5. Chill in the refrigerator for at least 30 minutes before serving.
