Description
A refreshing macaroni salad made with Greek yogurt instead of mayonnaise.
Ingredients

- 2 cups elbow macaroni
- 1 cup Greek yogurt
- 1/2 cup diced celery
- 1/2 cup diced bell pepper
- 1/4 cup chopped green onion
- 1/4 cup diced cucumber
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
- Cook the macaroni according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine Greek yogurt, Dijon mustard, salt, and pepper.
- Add the cooked macaroni, celery, bell pepper, green onion, and cucumber to the bowl.
- Toss everything together until well mixed.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add other vegetables like carrots or peas.
- Can be stored in the refrigerator for up to 3 days.
- Adjust seasoning to your preference.
