Ingredients

- 2 pounds of yellow potatoes
- 1/4 cup olive oil
- Juice of 2 lemons
- 1 tablespoon dried oregano
- 4 cloves garlic, minced
- Salt and pepper to taste
- 1 cup chicken or vegetable broth
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cut the potatoes into wedges.
- In a large bowl, mix olive oil, lemon juice, oregano, garlic, salt, and pepper.
- Add the potatoes to the bowl and toss to coat.
- Place the potatoes in a baking dish.
- Pour the broth over the potatoes.
- Bake for 45 minutes, turning occasionally, until golden and tender.
