Ingredients

- 1 lb ground turkey
- 1 cup cooked rice
- 1 cup diced tomatoes
- 1/2 cup diced cucumber
- 1/4 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp oregano
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add ground turkey and cook until browned.
- Stir in diced tomatoes and oregano.
- Simmer for 5 minutes.
- In a bowl, combine cooked rice, cucumber, red onion, olives, and lemon juice.
- Top the rice mixture with the turkey.
- Sprinkle with feta cheese.
- Season with salt and pepper.
- Serve warm.
