Ingredients

  • 2 cups water
  • 2 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, pitted
  • 1 lemon, juiced

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. In a skillet, heat olive oil over medium heat.
  5. Season chicken with oregano, salt, and pepper.
  6. Cook chicken for 6-7 minutes on each side until done.
  7. Let chicken rest, then slice it.
  8. In a bowl, combine cooked quinoa, tomatoes, cucumber, onion, feta, and olives.
  9. Top with sliced chicken and drizzle lemon juice.
  10. Serve immediately.
