Description
Flavorful Greek chicken meatballs served with lemon orzo.
Ingredients

- 1 lb ground chicken
- 1/4 cup breadcrumbs
- 1/4 cup feta cheese, crumbled
- 1/4 cup parsley, chopped
- 1 egg, beaten
- 2 cloves garlic, minced
- 1 tsp oregano
- Salt and pepper to taste
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 lemon, juiced and zested
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix ground chicken, breadcrumbs, feta, parsley, egg, garlic, oregano, salt, and pepper.
- Form mixture into meatballs and place on a baking sheet.
- Bake meatballs for 20 minutes or until cooked through.
- In a pot, bring chicken broth to a boil.
- Add orzo and cook according to package instructions.
- Stir in lemon juice and zest once orzo is cooked.
- Serve meatballs over lemon orzo.
Notes
- Adjust seasoning to your taste.
- Great with a side of tzatziki sauce.
- Can substitute ground turkey for chicken.
