Greek chicken alfredo with garlic potatoes and spicy hot honey tahini pesto.


Ingredients

  • 2 chicken breasts
  • 1 cup Alfredo sauce
  • 4 medium potatoes
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup tahini
  • 2 tablespoons hot honey
  • 1/4 cup fresh basil, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice potatoes and toss with olive oil, garlic, salt, and pepper.
  3. Spread potatoes on a baking sheet and roast for 25-30 minutes.
  4. Cook chicken breasts in a skillet over medium heat until golden brown and cooked through.
  5. In a bowl, mix tahini, hot honey, and chopped basil to make the pesto.
  6. Combine the cooked chicken with Alfredo sauce.
  7. Serve chicken over garlic potatoes and drizzle with spicy hot honey tahini pesto.
