Ingredients

- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 carrots, diced
- 3 cups chicken broth
- 1 cup milk
- 4 tablespoons butter
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
Instructions
- In a large pot, melt butter over medium heat.
- Add onion and carrots, cooking until soft.
- Add diced potatoes and chicken broth.
- Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Stir in milk and season with salt and pepper.
- For a creamier texture, blend part of the soup with an immersion blender.
- Serve hot, topped with cheese if desired.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- Reheat on the stove or in the microwave.
- Feel free to add your favorite herbs for extra flavor.
