A hearty and comforting soup made with ground beef and fresh vegetables.
Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 1 cup green beans, chopped
- 1 cup corn, frozen or canned
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion, carrots, and celery. Sauté until softened.
- Add ground beef. Cook until browned.
- Stir in diced tomatoes, beef broth, green beans, corn, garlic powder, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Remove bay leaf before serving.
Notes
- Feel free to add other vegetables you like.
- This soup freezes well for future meals.
