- 1 9-inch pie crust
- 1 cup granulated sugar
- 1/2 cup cornstarch
- 1/4 teaspoon salt
- 4 cups whole milk
- 3 large egg yolks
- 1 tablespoon vanilla extract
- 1 cup shredded coconut
- 1 tablespoon butter
- whipped cream for topping
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, mix sugar, cornstarch, and salt.
- Gradually stir in milk and cook over medium heat, stirring constantly.
- Once thickened, remove from heat and whisk in egg yolks, vanilla, coconut, and butter.
- Pour filling into the pre-baked pie crust.
- Chill in the refrigerator for at least 4 hours.
- Top with whipped cream before serving.
Notes
- Use fresh coconut for a richer flavor.
- Make sure to cool the pie completely before refrigerating.
- For added texture, toast the shredded coconut before adding it to the filling.
