Description
A delicious and moist carrot cake inspired by Gordon Ramsay’s recipe.
Ingredients

- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups grated carrots
- 1 cup crushed pineapple (drained)
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts
- 1 teaspoon vanilla extract
- 1 cup cream cheese (for frosting)
- 2 cups powdered sugar (for frosting)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, whisk eggs and oil together. Add grated carrots and crushed pineapple.
- Combine the wet and dry ingredients. Stir in walnuts and vanilla extract.
- Pour the batter into greased cake pans.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let the cakes cool completely.
- For frosting, beat cream cheese and powdered sugar until smooth.
- Frost the cooled cakes and serve.
Notes
- Store leftovers in the refrigerator.
- This cake can be made a day ahead.
