Description
A collection of gluten-free side dishes perfect for Thanksgiving.
Ingredients
Scale
- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 cup of cranberries
- 1/2 cup of chopped pecans
- 1/4 cup of maple syrup
- 1 teaspoon of cinnamon
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let sit for 5 minutes.
- Fluff quinoa with a fork and stir in cranberries, pecans, maple syrup, cinnamon, salt, and pepper.
- Serve warm.
Notes
- Check that all ingredients are certified gluten-free.
- Can be made ahead and reheated.
- Adjust sweetness by adding more or less maple syrup.
