A collection of gluten-free side dishes perfect for Thanksgiving.


Ingredients

  • 2 cups of quinoa
  • 4 cups of vegetable broth
  • 1 cup of cranberries
  • 1/2 cup of chopped pecans
  • 1/4 cup of maple syrup
  • 1 teaspoon of cinnamon
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let sit for 5 minutes.
  5. Fluff quinoa with a fork and stir in cranberries, pecans, maple syrup, cinnamon, salt, and pepper.
  6. Serve warm.

  • Can be made ahead and reheated.
