Ingredients

- 1 turkey (12-14 pounds)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup gluten-free bread crumbs
- 1 onion, chopped
- 2 celery stalks, chopped
- 1 cup chicken broth
- 2 teaspoons dried thyme
- 2 teaspoons dried sage
- 1/2 cup cranberries
Instructions
- Preheat oven to 325°F (165°C).
- Prepare the turkey by rubbing it with olive oil, salt, and pepper.
- In a pan, sauté onion and celery until soft.
- Add gluten-free bread crumbs, chicken broth, thyme, sage, and cranberries.
- Stuff the turkey with the mixture.
- Place turkey in a roasting pan and cover with foil.
- Roast for 3-4 hours, removing foil in the last hour.
- Let rest for 20 minutes before carving.
