- 2 cups gluten-free flour
- 1 cup coconut milk
- 1/2 cup maple syrup
- 1/4 cup vegetable oil
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1 cup pumpkin puree
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the gluten-free flour, baking powder, and salt.
- In another bowl, combine coconut milk, maple syrup, vegetable oil, and vanilla extract.
- Stir the wet ingredients into the dry ingredients until smooth.
- Add pumpkin puree and mix well.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let it cool before serving.
