Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the butter, brown sugar, and granulated sugar.
- Add the egg and vanilla extract, mixing well.
- In another bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, and cloves.
- Gradually add the dry ingredients to the wet ingredients.
- Stir in the brewed coffee and chocolate chips, if using.
- Drop spoonfuls of dough onto a baking sheet.
- Bake for 10-12 minutes or until golden.
- Let cool before serving.
