A hearty stew featuring ginger, sweet potato, coconut milk, lentils, and kale.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh ginger, grated
  • 2 sweet potatoes, peeled and diced
  • 1 cup lentils, rinsed
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 2 cups kale, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic; sauté until soft.
  3. Stir in ginger and sweet potatoes; cook for 5 minutes.
  4. Add lentils and vegetable broth; bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Stir in coconut milk and kale; cook for an additional 10 minutes.
  7. Season with salt and pepper; serve hot.
