Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons fresh ginger, grated
- 2 sweet potatoes, peeled and diced
- 1 cup lentils, rinsed
- 4 cups vegetable broth
- 1 can coconut milk
- 2 cups kale, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic; sauté until soft.
- Stir in ginger and sweet potatoes; cook for 5 minutes.
- Add lentils and vegetable broth; bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Stir in coconut milk and kale; cook for an additional 10 minutes.
- Season with salt and pepper; serve hot.

- This stew can be stored in the refrigerator for up to 4 days.
