This is a classic German potato pancakes recipe, also known as Kartoffelpuffer.

- 4 large potatoes, peeled and grated
- 1 onion, grated
- 2 eggs
- 1/4 cup all-purpose flour
- Salt, to taste
- Pepper, to taste
- Vegetable oil, for frying
Instructions
- Grate the potatoes and onion into a bowl.
- Drain excess moisture from the grated potatoes.
- Add eggs, flour, salt, and pepper to the potato mixture.
- Mix until well combined.
- Heat oil in a skillet over medium heat.
- Scoop the mixture into the skillet and flatten it into pancakes.
- Fry until golden brown on both sides.
- Remove and drain on paper towels.
Notes
- Serve with applesauce or sour cream.
- Adjust seasoning according to your taste.
- Keep pancakes warm while frying the rest.
