Description

A rich German chocolate coconut pecan roll cake with layers of chocolate, coconut, and pecans.


Ingredients

  • 2 cups granulated sugar
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup shredded coconut
  • 1 cup chopped pecans
  • 1 cup sweetened condensed milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour two round cake pans.
  3. In a bowl, mix flour, sugar, cocoa, baking powder, baking soda, and salt.
  4. Add eggs, buttermilk, oil, and vanilla. Mix until smooth.
  5. Stir in boiling water until well combined.
  6. Pour batter into prepared pans.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Let cakes cool in pans for 10 minutes, then transfer to wire racks.
  9. In a separate bowl, mix coconut, pecans, and sweetened condensed milk.
  10. Spread the coconut pecan mixture between the layers and on top of the cake.
