Ingredients

- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup chopped parsley
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 cup chicken broth
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine ground chicken, breadcrumbs, parmesan, garlic, parsley, egg, salt, and pepper.
- Mix well until all ingredients are combined.
- Shape the mixture into meatloaves and place them in a baking dish.
- Drizzle olive oil on top of the meatloaves.
- Pour chicken broth into the bottom of the baking dish.
- Bake for 25-30 minutes or until cooked through.
- Let rest for 5 minutes before serving.
Notes
- Serve with a side of vegetables or pasta.
- Store leftovers in the refrigerator for up to 3 days.
- You can substitute ground turkey for chicken if preferred.
