Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine potatoes, carrots, bell peppers, and garlic.
- Drizzle with olive oil and sprinkle with rosemary, thyme, salt, and pepper.
- Toss everything until well coated.
- Spread the mixture on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes or until golden and tender.
- Stir halfway through for even cooking.
- Serve warm.
