Ingredients

- 4 chicken breasts
- 4 cloves of garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 pounds potatoes, peeled and cubed
- 1/2 cup milk
- 4 tablespoons butter
- 1 pound carrots, peeled and cut into sticks
- 1 tablespoon honey
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix olive oil, garlic, thyme, rosemary, salt, and pepper.
- Coat chicken breasts with the garlic herb mixture.
- Place chicken on a baking sheet and roast for 25-30 minutes.
- While the chicken is cooking, boil potatoes until tender, about 15 minutes.
- Drain potatoes, then mash with milk and butter until creamy.
- In a separate pan, toss carrots with honey, salt, and pepper.
- Add carrots to the oven for the last 20 minutes of chicken cooking time.
- Serve chicken with creamy mashed potatoes and roasted carrots.
Notes
- Adjust seasoning to your taste.
- For extra creaminess, add more butter to the mashed potatoes.
- You can use fresh herbs if available.
