Description

A flavorful dish featuring garlic herb chicken served with creamy mashed potatoes and roasted carrots.


Ingredients

  • 4 chicken breasts
  • 4 cloves of garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1 pound carrots, peeled and cut into sticks
  • 1 tablespoon honey

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic, thyme, rosemary, salt, and pepper.
  3. Coat chicken breasts with the garlic herb mixture.
  4. Place chicken on a baking sheet and roast for 25-30 minutes.
  5. While the chicken is cooking, boil potatoes until tender, about 15 minutes.
  6. Drain potatoes, then mash with milk and butter until creamy.
  7. In a separate pan, toss carrots with honey, salt, and pepper.
  8. Add carrots to the oven for the last 20 minutes of chicken cooking time.
  9. Serve chicken with creamy mashed potatoes and roasted carrots.

Notes

  • Adjust seasoning to your taste.
  • For extra creaminess, add more butter to the mashed potatoes.
  • You can use fresh herbs if available.
