Ingredients

- 1 whole chicken (about 4–5 lbs)
- 1/2 cup unsalted butter, softened
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
- 1 lemon, halved
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, mix the butter, garlic, rosemary, thyme, parsley, salt, and pepper.
- Pat the chicken dry with paper towels.
- Rub the garlic herb butter all over the chicken and under the skin.
- Place the lemon halves inside the cavity of the chicken.
- Place the chicken in a roasting pan.
- Roast in the oven for 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10-15 minutes before carving.

- Serve with your choice of sides.
- Leftovers can be stored in the refrigerator for up to 3 days.
