Ingredients

  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 1 lemon, halved

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix the butter, garlic, rosemary, thyme, parsley, salt, and pepper.
  3. Pat the chicken dry with paper towels.
  4. Rub the garlic herb butter all over the chicken and under the skin.
  5. Place the lemon halves inside the cavity of the chicken.
  6. Place the chicken in a roasting pan.
  7. Roast in the oven for 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
  8. Let the chicken rest for 10-15 minutes before carving.
