Ingredients

  • 1 cup cherry tomatoes, halved

  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced chicken and cook until browned.
  3. Stir in minced garlic and cook for 1 minute.
  4. Add gnocchi and chicken broth; bring to a simmer.
  5. Add spinach and cherry tomatoes; cook until spinach wilts.
  6. Stir in Parmesan cheese and season with salt and pepper.
