Description

A delicious bowl featuring garlic butter shrimp served over a creamy veggie mash.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 4 tbsp garlic butter
  • 2 cups cauliflower, chopped
  • 1 cup broccoli, chopped
  • 1/2 cup carrots, diced
  • 1/4 cup cream
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add shrimp and cook until pink, about 3-4 minutes.
  3. Stir in garlic butter and cook for another minute.
  4. In another pot, steam cauliflower, broccoli, and carrots until tender.
  5. Blend steamed veggies with cream until smooth.
  6. Season the veggie mash with salt and pepper.
  7. Serve shrimp over the veggie mash and garnish with parsley.
