A delicious bowl featuring garlic butter shrimp served over a creamy veggie mash.
Ingredients

- 1 lb shrimp, peeled and deveined
- 4 tbsp garlic butter
- 2 cups cauliflower, chopped
- 1 cup broccoli, chopped
- 1/2 cup carrots, diced
- 1/4 cup cream
- Salt and pepper to taste
- 1 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pan over medium heat.
- Add shrimp and cook until pink, about 3-4 minutes.
- Stir in garlic butter and cook for another minute.
- In another pot, steam cauliflower, broccoli, and carrots until tender.
- Blend steamed veggies with cream until smooth.
- Season the veggie mash with salt and pepper.
- Serve shrimp over the veggie mash and garnish with parsley.
