- 4 large russet potatoes
- 2 cups onions, thinly sliced
- 2 tablespoons butter
- 1 cup shredded Gruyère cheese
- 1/2 cup sour cream
- Salt to taste
- Pepper to taste
- Chives for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the potatoes and poke holes in them with a fork.
- Bake the potatoes for about 45 minutes or until tender.
- In a skillet, melt butter over medium heat and add onions.
- Cook onions until caramelized, about 15-20 minutes.
- Once potatoes are baked, cut them in half and scoop out some flesh.
- Mix the scooped potato with caramelized onions, sour cream, cheese, salt, and pepper.
- Stuff the potato skins with the mixture.
- Return stuffed potatoes to the oven for another 10 minutes.
- Garnish with chives before serving.

- Leftover potato flesh can be used in soups or other dishes.
