Description

French onion stuffed potatoes are a delicious twist on classic stuffed potatoes, filled with rich flavors of caramelized onions and cheese.


Ingredients

  • 4 large russet potatoes
  • 2 cups onions, thinly sliced
  • 2 tablespoons butter
  • 1 cup shredded Gruyère cheese
  • 1/2 cup sour cream
  • Salt to taste
  • Pepper to taste
  • Chives for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes and poke holes in them with a fork.
  3. Bake the potatoes for about 45 minutes or until tender.
  4. In a skillet, melt butter over medium heat and add onions.
  5. Cook onions until caramelized, about 15-20 minutes.
  6. Once potatoes are baked, cut them in half and scoop out some flesh.
  7. Mix the scooped potato with caramelized onions, sour cream, cheese, salt, and pepper.
  8. Stuff the potato skins with the mixture.
  9. Return stuffed potatoes to the oven for another 10 minutes.
  10. Garnish with chives before serving.
