French onion chicken soup: 5 steps to cozy goodness

Description

A warm and hearty soup with flavors of French onion and tender chicken.


Ingredients

  • 1 lb chicken breasts
  • 4 onions, thinly sliced
  • 4 cups beef broth
  • 2 cups water
  • 1 cup shredded Gruyère cheese
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • Salt to taste
  • Pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Heat olive oil and butter in a pot over medium heat.
  2. Add onions and cook until caramelized, about 20 minutes.
  3. Add garlic and cook for 1 minute.
  4. Pour in beef broth and water, and bring to a boil.
  5. Add chicken breasts and simmer for 20 minutes.
  6. Remove chicken, shred it, and return to the pot.
  7. Season with salt and pepper.
  8. Serve hot, topped with Gruyère cheese and thyme.

Notes

  • You can use rotisserie chicken for quicker preparation.
  • For a vegetarian version, omit chicken and use vegetable broth.
