Description
A warm and hearty soup with flavors of French onion and tender chicken.
Ingredients

- 1 lb chicken breasts
- 4 onions, thinly sliced
- 4 cups beef broth
- 2 cups water
- 1 cup shredded Gruyère cheese
- 2 tablespoons olive oil
- 1 tablespoon butter
- 2 cloves garlic, minced
- Salt to taste
- Pepper to taste
- Fresh thyme for garnish
Instructions
- Heat olive oil and butter in a pot over medium heat.
- Add onions and cook until caramelized, about 20 minutes.
- Add garlic and cook for 1 minute.
- Pour in beef broth and water, and bring to a boil.
- Add chicken breasts and simmer for 20 minutes.
- Remove chicken, shred it, and return to the pot.
- Season with salt and pepper.
- Serve hot, topped with Gruyère cheese and thyme.
Notes
- You can use rotisserie chicken for quicker preparation.
- For a vegetarian version, omit chicken and use vegetable broth.
