French Onion Beef Short Rib Soup: A Cozy Comfort Dish

Description

A hearty and flavorful soup made with beef short ribs and caramelized onions.


Ingredients

Scale
  • 2 lbs beef short ribs
  • 4 large onions, sliced
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 cup dry white wine
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 8 slices of French bread
  • 2 cups Gruyère cheese, shredded

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season the short ribs with salt and pepper and brown on all sides.
  3. Remove ribs and set aside.
  4. Add sliced onions and cook until caramelized, about 30 minutes.
  5. Add garlic and thyme, cooking for an additional 2 minutes.
  6. Pour in the wine and scrape the bottom of the pot.
  7. Return the short ribs to the pot and add beef broth.
  8. Bring to a boil, then reduce heat and simmer for 2 hours.
  9. Remove ribs, shred the meat, and discard bones.
  10. Return shredded meat to the soup and adjust seasoning.
  11. Toast French bread slices and place on top of the soup in bowls.
  12. Sprinkle cheese on top and broil until melted and bubbly.

Notes

  • For extra flavor, use homemade beef broth.
  • Adjust the amount of cheese according to your preference.
  • This soup can be made a day ahead and reheated.
