Description
A hearty and flavorful soup made with beef short ribs and caramelized onions.
Ingredients

- 2 lbs beef short ribs
- 4 large onions, sliced
- 4 cloves garlic, minced
- 6 cups beef broth
- 1 cup dry white wine
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- 8 slices of French bread
- 2 cups Gruyère cheese, shredded
Instructions
- Heat olive oil in a large pot over medium heat.
- Season the short ribs with salt and pepper and brown on all sides.
- Remove ribs and set aside.
- Add sliced onions and cook until caramelized, about 30 minutes.
- Add garlic and thyme, cooking for an additional 2 minutes.
- Pour in the wine and scrape the bottom of the pot.
- Return the short ribs to the pot and add beef broth.
- Bring to a boil, then reduce heat and simmer for 2 hours.
- Remove ribs, shred the meat, and discard bones.
- Return shredded meat to the soup and adjust seasoning.
- Toast French bread slices and place on top of the soup in bowls.
- Sprinkle cheese on top and broil until melted and bubbly.
Notes
- For extra flavor, use homemade beef broth.
- Adjust the amount of cheese according to your preference.
- This soup can be made a day ahead and reheated.
