Description

A refreshing French Niçoise Pasta Salad with vegetables, olives, and tuna.


Ingredients

  • 200g pasta
  • 1 can tuna in olive oil
  • 150g green beans
  • 100g cherry tomatoes, halved
  • 50g black olives
  • 2 hard-boiled eggs
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt to taste
  • Pepper to taste

Instructions

  1. Boil the pasta according to package instructions.
  2. Blanch green beans in salted water for 3 minutes.
  3. Drain pasta and green beans, then rinse under cold water.
  4. In a large bowl, combine pasta, green beans, cherry tomatoes, olives, and tuna.
  5. In a small bowl, whisk olive oil, red wine vinegar, salt, and pepper.
  6. Pour dressing over the salad and toss gently.
  7. Slice hard-boiled eggs and place on top before serving.
