Description

French crullers are light and airy pastries made from pâte à choux.


Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Vegetable oil for frying
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. In a saucepan, bring water and butter to a boil.
  2. Remove from heat and stir in flour and salt until mixture forms a ball.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in vanilla extract.
  5. Heat oil in a deep fryer to 350°F (175°C).
  6. Spoon batter into a piping bag with a star tip.
  7. Pipe rings onto parchment paper and carefully drop into hot oil.
  8. Fry until golden brown, about 4-5 minutes per side.
  9. Remove and drain on paper towels.
  10. Mix powdered sugar and milk to make glaze and drizzle over cooled crullers.
