Ingredients

- 8 large flour tortillas
- 12 large eggs
- 1 cup shredded cheese
- 1 cup cooked and crumbled sausage
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- In a large skillet, cook the sausage, bell peppers, and onions until softened.
- In a bowl, whisk the eggs with salt and pepper.
- Add the eggs to the skillet and scramble until cooked through.
- Remove from heat and stir in the shredded cheese.
- Lay a tortilla flat and add a portion of the egg mixture.
- Wrap the tortilla tightly around the filling.
- Repeat with remaining tortillas and filling.
- Wrap each burrito in foil and place in a freezer bag.
Notes
- Reheat in the microwave or oven when ready to eat.
- Customize with your favorite vegetables or meats.
- Store in the freezer for up to 3 months.
