Ingredients

  • 12 large eggs
  • 1 cup shredded cheese
  • 1 cup cooked and crumbled sausage
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. In a large skillet, cook the sausage, bell peppers, and onions until softened.
  2. In a bowl, whisk the eggs with salt and pepper.
  3. Add the eggs to the skillet and scramble until cooked through.
  4. Remove from heat and stir in the shredded cheese.
  5. Lay a tortilla flat and add a portion of the egg mixture.
  6. Wrap the tortilla tightly around the filling.
  7. Repeat with remaining tortillas and filling.
  8. Wrap each burrito in foil and place in a freezer bag.
