- 1 cup cottage cheese
- 4 large eggs
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- Cooking spray or butter for the pan
Instructions
- In a bowl, mix cottage cheese, eggs, baking powder, vanilla extract, and salt.
- Blend until smooth.
- Heat a non-stick skillet over medium heat.
- Grease the skillet with cooking spray or butter.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form, then flip and cook until golden brown.
- Repeat with remaining batter.
- Serve warm with your choice of toppings.
Notes
- These pancakes can be frozen and reheated.
- Try adding fruit for extra flavor.
- Adjust the thickness by adding more or less cottage cheese.
