- 4 fillets of white fish (such as cod or tilapia)
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 2 tablespoons capers, rinsed
- 1/2 cup black olives, pitted and chopped
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and garlic, sauté until softened.
- Stir in diced tomatoes, capers, olives, and red pepper flakes.
- Simmer for 10 minutes.
- Season fish fillets with salt and pepper.
- Place fish in the skillet and spoon sauce over them.
- Cover and cook for 8-10 minutes until fish is cooked through.
- Garnish with fresh parsley before serving.
