Ingredients

- 2 fillets of fish (such as cod or tilapia)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1/4 cup black olives, pitted and sliced
- 2 tablespoons capers
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a pan over medium heat.
- Add minced garlic and sauté until fragrant.
- Pour in diced tomatoes and stir in olives, capers, and red pepper flakes.
- Season sauce with salt and pepper.
- Simmer for 10 minutes.
- Place fish fillets in the sauce, cover, and cook for 8-10 minutes until fish is cooked through.
- Serve hot, garnished with fresh parsley.
Notes
- Use any firm white fish for this recipe.
- Adjust the spice level by varying the amount of red pepper flakes.
- Serve with crusty bread or pasta.
