A moist and flavorful cake made with figs, almonds, and dates.
Ingredients

- 1 cup dried figs, chopped
- 1 cup almonds, ground
- 1 cup dates, pitted and chopped
- 1/2 cup honey
- 1/2 cup coconut oil
- 4 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup whole wheat flour
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix chopped figs, dates, and honey.
- In another bowl, beat eggs and add coconut oil and vanilla extract.
- Combine the wet ingredients with the fig and date mixture.
- In a separate bowl, mix ground almonds, flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture.
- Pour the batter into a greased cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let it cool before serving.
Notes
- Store leftovers in an airtight container.
- Serve with whipped cream or yogurt.
- Can be made a day ahead for better flavor.
