A flavorful fiesta chicken casserole packed with chicken, beans, and cheese.

			- 2 cups cooked chicken, shredded
 - 1 can black beans, drained and rinsed
 - 1 cup corn
 - 1 can diced tomatoes with green chilies
 - 1 cup shredded cheddar cheese
 - 1 cup salsa
 - 1 teaspoon cumin
 - 1 teaspoon chili powder
 - 1 tablespoon olive oil
 - 2 cups tortilla chips, crushed
 
Instructions
- Preheat your oven to 350°F (175°C).
 - In a large bowl, combine chicken, black beans, corn, diced tomatoes, salsa, cumin, and chili powder.
 - Spread the mixture into a greased baking dish.
 - Top with crushed tortilla chips and shredded cheese.
 - Drizzle olive oil over the top.
 - Bake for 25-30 minutes until cheese is melted and bubbly.
 - Let it cool for a few minutes before serving.
 
Notes
- Use leftover chicken for a quick meal.
 - Adjust spice level with more or less chili powder.
 - Serve with sour cream and avocado if desired.
