Ingredients
- Turkey – 1 whole (12-14 lbs)
- Butter – 1 cup, softened
- Fresh herbs (rosemary, thyme, sage) – 1 bunch each
- Garlic – 4 cloves, minced
- Onions – 2, quartered
- Carrots – 3, chopped
- Celery – 3 stalks, chopped
- Chicken broth – 4 cups
- Salt – to taste
- Pepper – to taste
- Green beans – 1 lb
- Almonds – 1 cup, slivered
- Sweet potatoes – 4, peeled and cubed
- Maple syrup – 1/2 cup
Instructions
- Preheat your oven to 325°F (165°C).
- Prepare the turkey by rubbing it with softened butter, minced garlic, salt, and pepper.
- Stuff the turkey cavity with fresh herbs and quartered onions.
- Place the turkey in a roasting pan and surround it with chopped carrots and celery.
- Pour chicken broth into the pan.
- Roast the turkey for about 3 hours, basting occasionally.
- Meanwhile, blanch the green beans in boiling water for 2 minutes, then drain.
- Sauté green beans with slivered almonds in a skillet until golden.
- Boil sweet potatoes until tender, then mash with maple syrup.
- Carve the turkey and serve with green beans and sweet potatoes.
Notes
- Let the turkey rest for 20 minutes before carving.
- Adjust seasoning to your taste.
