A fancy New Year’s Eve dinner featuring elegant dishes to celebrate the occasion.
Ingredients

- 1 whole salmon (3–4 lbs)
- 2 tablespoons olive oil
- 1 lemon, sliced
- 4 sprigs fresh dill
- Salt and pepper to taste
- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup asparagus, trimmed
- 1 tablespoon balsamic vinegar
- 2 tablespoons feta cheese, crumbled
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the salmon and pat it dry.
- Place the salmon on a baking sheet lined with parchment paper.
- Drizzle olive oil over the salmon and season with salt and pepper.
- Place lemon slices and dill on top of the salmon.
- Bake for 25-30 minutes until cooked through.
- While the salmon bakes, rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth, bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In the last 5 minutes of cooking quinoa, add asparagus to the pot.
- Once cooked, fluff quinoa and asparagus with a fork and drizzle with balsamic vinegar.
- Serve salmon with quinoa and asparagus, topped with feta cheese.
Notes
- Serve with a glass of champagne for a festive touch.
- Adjust seasoning to your taste.
- You can substitute salmon with another fish if preferred.
