- 8 large eggs
- 1 cup (240 ml) of milk
- 6 slices of day-old bread, cubed
- 2 cups of shredded cheese (cheddar or a blend)
- 2 cups of fresh, chopped spinach
- 1 cup of diced bell peppers
- 1 medium onion, diced
- 1 pound of cooked and crumbled breakfast sausage
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
- 1 tablespoon of olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
- Cube the bread and chop the vegetables.
- Cook and crumble the sausage in a skillet.
- In a large bowl, combine the egg mixture with the cubed bread.
- Add the cooked sausage, sautéed vegetables, and cheese to the bowl.
- Gently fold all the ingredients together.
- Grease a 9×13 inch baking dish and pour the mixture into it.
- Bake for 30-35 minutes until golden brown and set in the center.
- Let cool for 5-10 minutes before serving.
Notes
- Can be made ahead of time and refrigerated overnight.
- Let the casserole cool before slicing to maintain its shape.
- Experiment with different vegetables and cheeses for variety.
