Ingredients

  • 8 large eggs
  • 1 cup (240 ml) of milk
  • 6 slices of day-old bread, cubed
  • 2 cups of shredded cheese (cheddar or a blend)
  • 2 cups of fresh, chopped spinach
  • 1 cup of diced bell peppers
  • 1 medium onion, diced
  • 1 pound of cooked and crumbled breakfast sausage
  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1 tablespoon of olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
  3. Cube the bread and chop the vegetables.
  4. Cook and crumble the sausage in a skillet.
  5. In a large bowl, combine the egg mixture with the cubed bread.
  6. Add the cooked sausage, sautéed vegetables, and cheese to the bowl.
  7. Gently fold all the ingredients together.
  8. Grease a 9×13 inch baking dish and pour the mixture into it.
  9. Bake for 30-35 minutes until golden brown and set in the center.
  10. Let cool for 5-10 minutes before serving.
