Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and garlic. Cook until softened.
- Stir in pumpkin puree, vegetable broth, cinnamon, nutmeg, salt, and pepper.
- Bring to a simmer and cook for 15 minutes.
- Blend until smooth using an immersion blender.
- Serve hot and garnish with fresh parsley.
