- 1 lb beef eyeballs
- 4 cups beef broth
- 1 cup diced onions
- 2 cloves garlic, minced
- 1 cup diced carrots
- 1 cup diced celery

- 1 tsp dried thyme
Instructions
- Rinse beef eyeballs under cold water.
- In a large pot, sauté onions and garlic until fragrant.
- Add carrots and celery, cooking until softened.
- Pour in beef broth and bring to a boil.
- Add eyeballs, salt, pepper, and thyme.
- Simmer for 30 minutes.
- Serve hot in bowls.
