Ethiopian split pea stew is a hearty and flavorful dish made with split peas and spices.
Ingredients

- 1 cup split peas
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 2 tablespoons vegetable oil
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon paprika
- 4 cups vegetable broth
- Salt to taste
- Black pepper to taste
Instructions
- Rinse the split peas under cold water.
- In a pot, heat the vegetable oil over medium heat.
- Add the chopped onion and sauté until translucent.
- Add garlic and ginger, cook for 2 minutes.
- Stir in turmeric, cumin, and paprika.
- Add the rinsed split peas and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes until peas are tender.
- Season with salt and black pepper to taste.
- Serve hot with injera or rice.
